Vineyard elevation: 260/780mt. A.s.l. – exposure: South – West.
Grapes: Sangiovese 85%, Mammolo, Canaiolo, Colorino and 15% Merlot.
Harvest: from 10 September to September 29, 2015.
Vinification: fermentation in vats with maceration for 20 days at a temperature of not more than 30° c.
Ageing: Two years in small and medium-sized French oak barrels in our cellars of Earth at a constant temperature. After bottling was aged in the bottle for a minimum of one year in air-conditioned environment.
Main analyses: 13.50° Alcohol-acidity 5.20 – 31.50 dry extract – pH 3.5
Serving suggestions: traditional Tuscan dishes, red meats, game and mature cheeses.
Production: 26,000 bottles per year.
